Remember the Sea Salt and Caramel Chocolate Chip Cookies I shared with you last week? Well, several of you emailed to say that you made them and loved them — and that makes me so happy! My goal here at MisterMartha.com is to create great recipes, how-to’s, and projects that will turn out perfectly the first time you try them. That’s why I test, tweak, and test again before sharing.
So, I have a little confession…
Sometimes I get a little distracted as I take pictures, measure things out, jot notes down, etc., while I’m creating things to share with you here.
You know the drill —
The phone rings. Time to check Twitter. A ding from Facebook. Oh, that would look great on Instagram! A text beckons me to respond. Time for a little Pinterest! And then it’s like “what was I doing?” I’m a pretty good multitasker but every now and then I end up with a big ‘ol mess. {And speaking of Facebook, Twitter, and Instagram — are you following @MisterMartha?}
This time, I made a rookie mistake — I forgot to line the pan with parchment. The addition of caramel bits to the cookies makes them stick to the pan. They stuck super-glue hard and there was not an easy way to remove them. So, when the cookie crumbles what do you do? Well, I decided to make parfaits. Since I already had this cookie mess, I needed to do something so they wouldn’t go to waste. I thought this would be good with pudding or ice cream but I had Greek yogurt in the fridge and had just picked up a jar of the new Smucker’s “Simple Delights Salted Caramel Topping” that I wanted to try so it was meant to be. “Salted Caramel, Greek Yogurt & Chocolate Chip Cookie Parfaits!”
I didn’t think those cookies could be improved, but yes, yes they can! Make a batch today and then make these “Salted Caramel, Greek Yogurt & Chocolate Chip Cookie Parfaits!”
I am receiving no compensation for mentioning this new Smucker’s product but when I try something I like, I’m always happy to share!
Be warned: It’s highly addictive!
- ½ cup Smuckers Simple Delights Salted Caramel Topping
- 4 freshly baked chocolate chip cookies, crumbled (see note)
- 2 cups vanilla Greek yogurt
- Place 1 tablespoon of the caramel topping in 4 serving dishes (I used half-pint Ball canning jars). Dividing evenly, top with crumbled cookies and yogurt; repeat with caramel, cookie crumbles, and yogurt. Top with remaining cookie crumbles and additional caramel topping if desired.
Substitute the Greek yogurt with chocolate or vanilla pudding or ice-cream if desired.
Warm the caramel topping for an exceptional treat!
Now these look delicious!! I had not seen this salted caramel. What a good idea to use up cookies. Sometimes I have extra ones or stick some in the freezer. My grandkids would love these. Will treat them to this at our next summertime get together.
Thanks, Pam! They will love them — post some pictures of the fun with your cute grandchildren!
Hi Brett, I’m so glad I got to sit next to you at Camp Blogaway. I loved looking at the renovation of your Victorian. You have a good eye. These parfaits look divine. Looking forward to looking through more of your blog. Patricia
It was such a pleasure spending some time with you at Camp Blogaway! My only regret is that the weekend went by way too fast. I am hoping our paths cross again one of these days!
yummy snack!
