Cauliflower Couscous with Lime and Cilantro

  • 1 large head of cauliflower
  • 2 tablespoons extra virgin olive oil
  • ¼ cup chopped fresh cilantro
  • zest and juice of 1 medium lime
  • sea salt and freshly ground black peppercorns, to taste
  1. Divide the cauliflower into florets and place into the bowl of food processor fitted with a metal blade.
  2. Pulse until the cauliflower resembles couscous. About 15 1-second pulses.
  3. Heat the olive oil in a large skillet over medium heat. When hot, add the "couscous" and sauté, stirring occasionally, until golden brown, about 15 minutes.
  4. Add the cilantro, lime zest, and lime juice and stir. Add the salt and pepper as desired. Serve warm.
